Ingredients
- 1 bunch fresh chives, chopped (1 cup/250 mL)
- 1/4 cup Crisco® Canola or Vegetable Oil 50 mL
- 1 cup diced onions 250 mL
- 2 tbsp minced garlic 30 mL
- 2 tbsp butter 30 mL
- 2 tbsp chopped fresh basil 30 mL
- 1 cup chicken broth 250 mL
- 2 cups diced tomatoes 500 mL
- 1 lb shrimp, peeled and deveined 500 g
- 1/2 lb linguine 225 g
- Salt and pepper to taste
- Freshly grated Parmesan cheese
Preparation
- Cook linguine in boiling water until al dente. Purée chives and oil in food processor until smooth while cooking linguine. Set aside.
- Sauté onions and garlic in butter in large saucepan for 5 minutes or until onions are soft. Add basil and chicken broth. Simmer mixture over medium-high heat for approximately 10 minutes or until liquid is reduced to ¼ cup (50 mL).
- Add tomatoes and shrimp. Cook, stirring occasionally until shrimp are pink, about 5 minutes. Season with salt and pepper. Stir in linguine and half the chive oil. Mix well. Turn into large pasta bowl. Drizzle remaining chive oil on top and sprinkle with Parmesan cheese.

Frozen, unthawed shrimp work great in this recipe.
