Ingredients
- 10 large potatoes, peeled and coarsely chopped
- 500 g (2 cups) strong cheddar cheese, grated
- 250 ml (1 cup) sour cream
- 60 ml (1/4 cup) maple syrup
- Salt and pepper to taste
- 60 ml (1/4 cup) butter
- 1 egg
- 125 ml (1/2 cup) breadcrumbs
- 60 ml (1/4 cup) butter
Preparation
- Preheat the oven to 180˚C (350˚F). Fill a large casserole with salted water, and cook the potatoes. Strain.
- In a large bowl, mash the cooked potatoes, and then add the remaining ingredients (except for egg and breadcrumbs). Transfer to a buttered oven-proof dish.
- Gently beat egg and baste the puree with it. Sprinkle with breadcrumbs. Add butter and bake for about 30 minutes.
