Ingredients

  • 10 large potatoes, peeled and coarsely chopped
  • 500 g (2 cups) strong cheddar cheese, grated
  • 250 ml (1 cup) sour cream
  • 60 ml (1/4 cup) maple syrup
  • Salt and pepper to taste
  • 60 ml (1/4 cup) butter
  • 1 egg
  • 125 ml (1/2 cup) breadcrumbs
  • 60 ml (1/4 cup) butter

Preparation

  1. Preheat the oven to 180˚C (350˚F). Fill a large casserole with salted water, and cook the potatoes. Strain.
  2. In a large bowl, mash the cooked potatoes, and then add the remaining ingredients (except for egg and breadcrumbs). Transfer to a buttered oven-proof dish.
  3. Gently beat egg and baste the puree with it. Sprinkle with breadcrumbs. Add butter and bake for about 30 minutes.
