Preparation
- In a large bowl, beat egg with mustard, tarragon, salt and pepper until blended. Add turkey, green onions and breadcrumbs. Mix well.
- Shape mixture into 4 patties, about 1/2 inch (1.5 cm) thick. Heat oil in medium non-stick skillet over medium heat. Cook for 5 to 7 minutes on each side or until turkey is no longer pink. Remove from heat.
- Top each patty with a slice of Canadian Swiss cheese. Cover and let rest until cheese is melted, about 2 minutes. Serve patties on toasted kaiser rolls. Garnish with lettuce and sliced tomato.
