Crustless Ham and Bacon Quiche

Ingredients

  • 12 eggs 12
  • 2 cups cottage cheese 500 mL
  • 1/4 cup melted butter 60 mL
  • 1/2 cup flour 125 mL
  • 1 tsp baking powder 5 mL
  • 2 cups Swiss or cheddar cheese, grated 500 mL
  • 1/2 cup green onion, chopped 125 mL
  • 1 medium tomato, diced 1
  • 2 cups Schneiders Olde Fashioned® Ham, diced 500 mL
  • OR
  • Schneiders Fat Free® Ham, diced
  • 1/2 pkg 65 g Schneiders Fully Cooked Bacon, diced 1/2 pkg
  • 1/2 cup grated Parmesan cheese 125 mL

Preparation

  1. In large bowl whisk eggs. In medium bowl mix cottage cheese, butter, flour and baking powder together. Whisk into eggs. Stir in cheese, onion, tomato and ham.
  2. Pour into lightly greased 9"x13" (3.5 L) baking pan. Sprinkle with bacon pieces and Parmesan cheese. Bake in 400°F (200°C) oven for 15 minutes, reduce temperature to 325°F (160°C) and bake an additional 40-50 minutes or when a knife inserted in the middle comes out clean.
