Marinated Mixed Vegetables

Ingredients

  • 3 cups small broccoli florets 750 mL
  • 3 cups cauliflower florets 750 mL
  • 8 oz mushrooms, sliced (or small whole button mushrooms) 250 g
  • 1 medium sweet green or red pepper, chopped
  • 1 cup CROWN® Lily White Light or White Corn Syrup 250 mL
  • 1 cup MAZOLA® Canola, Corn or Sunflower Oil 250 mL
  • 1/2 cup vinegar 125 mL
  • 1/4 cup diced onion 50 mL
  • 2 tbsp poppy seeds 30 mL
  • Salt, to taste

Preparation

  1. In large bowl, combine broccoli, cauliflower, mushrooms and green pepper.
  2. In small bowl, whisk together corn syrup, oil, vinegar, onion, poppy seeds and salt. Pour over vegetables; toss well to coat.
  3. Cover and refrigerate at least 4 hours or up to 2 days. Stir occasionally. (May also be marinated in freezer bag.) To serve, drain marinade.
